Glazed Lemon Pound Cake

Cake
1 1/2 C. All Purpose Flour
1/2 t. Baking Powder
1/2 t. Baking Soda
1/2 t. Salt
3 Eggs, room temperature
1 C. Sugar
2 T. Butter, Softened
1 t. Vanilla
1/3 C. Fresh Lemon Juice
8 Drops Lemon Essential Oil
1/2 C. Coconut oil, Melted
Optional: 1 C. Blueberries

Glaze
1 C. Powdered Sugar
2 T. Milk
2 Drops Young Living Lemon Essential Oil

Instructions
  1. Preheat oven to 350 degrees.
  2. Grease and flour metal or glass 9x5 loaf pan, or use liners with cupcakes.
  3. Whisk together flour, baking soda, baking powder and salt.
  4. In a separate bowl, combine eggs, sugar, butter, vanilla and lemon juice with a mixer.
  5. Pour dry ingredients into wet ingredients and blend until smooth.
  6. Add melted coconut oil and and lemon essential oil. Mix well.
  7. Optional: Slowly stir in blueberries.
  8. Pour into prepared loaf pan or cupcake tins and bake for 45 -50 minutes or until toothpick comes out clean. Cook 20-25 min for cupcakes.
  9. Remove from oven and let set 3 minutes.
  10. While cooling, prepare glaze in a small bowl.
  11. Remove cake from pans, apply glaze, and allow to cool completely on a wire rack.​

Vanilla Bean Lavender Cupcakes
with
​Vanilla Lemon Frosting

Cake
1 ½ C. Flour
1 t. Baking Powder
½ C. Melted Butter
1 C. Sugar
3 Eggs
1 T. Vanilla Bean Paste
¾ C. Buttermilk
2-4 Drops Lavender

Instructions
  1. Preheat oven to 350.  Line C.cake pan with liners (makes 12-15 C.cakes)
  2. Whisk flour and baking powder together.
  3. In a mixer bowl combine butter and sugar.  Combine until thick.  Add eggs, one at a time, beating after each addition.  Beat in vanilla paste and lavender.
  4. Add flour mixture and buttermilk alternately, starting and ending with the flour.  DO NOT OVERMIX.
  5. Divide batter among liners filling ⅔ full.  Bake 15-20 minutes until toothpick comes out clean.
  6. Cool before frosting with Vanilla Lemon Buttercream (find below)

Vanilla Lemon Buttercream
1 C. Butter
3-4 C. Powdered Sugar 
2-4 Drops Lemon
1 t. Vanilla
1 t. Milk

Instructions
  1. Mix butter and powdered sugar.  It may take a bit more milk to get to the consistency you like.  
  2. Add lemon Drops and vanilla.  
  3. Whip on high speed until fluffy.

Lime Cupcakes w/Lime Frosting

Cake
1 Box of Yellow Cake Mix
3 Eggs
1 C. Water
1/3 C. Oil
5 Drops Lime Essential Oil
Zest from One Lime

Mix and bake according to box directions.

Frosting
3 oz. Softened Cream Cheese
1/2 C. Softened Butter 
6 C. Powdered Sugar
3 Drops Lime Essential Oil
3 T. Milk ​

​Mix.  Frost on cooled cupcakes.
